    PIZZA PINWHEELS                                                                            Serves: 4-6 Ingredients 1 cup warm water 1 TBSP yeast 1 TBSP sugar 1 TBSP oil 1 tsp salt 2½- 3 cups flour 1½- 2 cups Ragu® Six Cheese Pasta Sauce + more for dipping 2½ cups shredded mozzarella cheese 2 cups total pizza toppings- mini pepperoni, diced ham, sliced olives, and pineapple tidbits, etc.   Instructions Combine warm water, yeast and sugar in a mixing bowl and let sit for about 3-4 minutes, until yeast is bubbling up. Add in oil, salt and flour. Start with 2½ cups of flour, then add more until the dough cleans the sides of the mixing bowl. (I use a mixer for this part as it makes it just so much easier!) Continue mixing for an additional 3-4 minutes, then cover with plastic wrap and let sit in a warm place for 15 minutes. In cold weather, I like to turn my oven on for about 3 or 4 minutes, then turn it off and let my dough rest in the oven. Preheat oven to 400 degrees F. Spray counter top with non-stick cooking spray and roll dough out into a large rectangle about ¼" thick. Top with Ragu® Pasta Sauce and spread to coat dough. sprinkle with 1 cup of cheese. Add pizza toppings- I did a section of dough for pepperoni pinwheels, another section with just cheese and a third with ham and pineapple. Top with another 1 cup of cheese.

  CRISPY PARMESAN GARLIC CHICKEN WITH ZUCCHINI   Ingredients 2 Chicken Breasts, sliced in half, or 4 thin chicken breasts 8 Tablespoons butter, divided ½ cup Italian Bread Crumbs ½ cup plus 1 Tablespoon grated parmesan, divided ¼ cup flour 2 medium zucchini, sliced 2 garlic cloves, minced Instructions In a large skillet over medium heat melt 2 Tablespoons butter. To make the chicken: Melt remaining 4 tablespoons of butter in a shallow dish. In another shallow dish combine bread crumbs, parmesan cheese, and flour. Dip the chicken in the butter and then coat in the bread crumb mixture and place in skillet. Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout. Set aside on plate. Add 2 Tablespoons of butter back to the skillet and saute the minced garlic for a minute. Add the zucchini to the skillet and saute until tender. Salt and pepper to taste and add some 1 Tablespoon parmesan. Add the chicken back to the skillet and heat for a minute or so.   HOMEMADE PEPPERONI PIZZA TWISTS   Ingredients 1 Package crescents (8 count) 1 Cup shredded mozzarella and Parmesan cheese blend 2 Tablespoons melted butter 12 pepperonis 1 cup marinara Instructions Preheat your oven to 350 degrees.   Chocolate Workout Brownies Total Time: 20m Yield: 9-12 brownies   Ingredients:          1 cup overripe mashed banana or applesauce 2/3 cup nut butter of choice, or allergy-friendly sub 1/3 cup cocoa powder 3 tbsp chocolate protein powder, or additional cocoa – I used ALOHA Chocolate Protein Powder 1 tsp pure vanilla extract 1/4 tsp salt 1/4 cup liquid sweetener of choice OR additional banana optional mini chocolate chips, crushed walnuts, etc. Instructions Notes: If using applesauce or unsweetened protein powder, or if planning to eat the brownies unfrosted, I recommend including the sweetener of choice. Using peanut butter gives a peanut-butter flavor, while almond or cashew butter taste more neutral. Sunbutter or pumpkin seed butter can be used for allergy-friendly brownies. You can use regular unsweetened cocoa or a combination of regular and dutch. Preheat oven to 325 F. Line an 8×8 pan with parchment paper. If using natural nut butter, gently warm it until it is easily stir-able. Combine all ingredients in a bowl, stir until completely smooth, and spread into the prepared pan (see video). Bake on the center rack 20-25 minutes (20 for super fudgy brownies) – they will be undercooked when you take them out. Let cool, then loosely cover with a paper towel and place in the fridge overnight, during which time they will firm up without losing their fudginess. They are also much sweeter the next day! Frosting options are listed earlier in this post, and you need about 1/2 cup total. Once cut, the brownies can either be stored in the fridge for 2-3 days or in the freezer for up to a month. You can even eat them straight out of the freezer if you wish!   Avocado Black Bean Quesadillas Prep time: 5 mins   Cook time: 15 mins   Total time: 20 mins Serves: 4 Ingredients ½ onion, sliced ½ bell pepper, sliced 1 tablespoon olive oil ½ cup black beans, drained 1 tablespoon taco seasoning 4 medium soft flour tortillas 2 avocados, peeled, halved, seeded and sliced ¼ cup minced cilantro 1 lime, cut in half 1 cup light Mexican, Cheddar or mozzarella cheese oil or cooking spray for grilling Instructions In a medium pan over medium-high heat, saute onion and bell pepper in 1 tablespoon oil for 2-3 minutes or until tender. Add the black beans and taco seasoning. Cook for another minute. Transfer mixture into a small bowl and set aside. Rinse and wipe down pan and return to heat. Drizzle with a light layer of oil or spray with cooking spray. In a small bowl, lightly mash the avocados with a fork. Stir in cilantro and juice of ½ lime, season with salt and pepper to taste. Spread a quarter of mashed avocado onto half of a tortilla. Top with bean mixture and ¼th cup of cheese. Fold the tortilla closed over the veggies. Repeat until all tortillas are filled and all fillings are used. Cook on medium-high heat for 2-3 minutes per side or until the outside is crispy and cheese has fully melted.   Healthy Banana Chocolate Chip Cookies   1 cup (120g) white whole wheat flour or gluten-free* flour (measured like this) ¾ tsp baking powder ½ tsp ground cinnamon ¼ tsp salt 1 ½ tbsp (21g) unsalted butter or coconut oil, melted 1 tsp vanilla extract ¼ cup (67g) mashed banana (about 1 tiny banana) 1 tbsp (15mL) nonfat milk, room temperature ⅓ cup (64g) coconut sugar 3 tbsp (42g) miniature chocolate chips, divided In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. In a separate bowl, stir together the butter, vanilla, mashed banana, and milk. Stir in the coconut sugar. Add in the flour mixture, stirring just until incorporated. Fold in 2 ½ tablespoons of miniature chocolate chips. Chill the cookie dough for 30 minutes. Preheat the oven to 350°F, and line a baking sheet with a silicone baking mat or parchment paper. Drop the cookie dough onto the prepared baking sheet using a spoon and a spatula. Flatten the cookie dough to the desired thickness and width.   Italian Bread Dipping (Oil) Sauce Ingredients A pinch of dried or fresh Basil, or more to taste (for each bowl) A pinch of dried or fresh Oregano, or more to taste (for each bowl) 3 Garlic cloves, peeled and crushed, divided (OPTIONAL) 1/2 cup Extra Virgin (good quality) Olive Oil, divided  3 (up to 6) Tablespoons Balsamic Vinegar, divided (adjust to taste)  Parmesan Cheese, to taste Instructions Divide the olive oil into 3 parts in individual, small and shallow dipping bowls. Add about 1-2 tablespoons Balsamic vinegar into each bowl. 2 tablespoons vinegar is right up my alley but feel free to adjust the amount to taste. Add the crushed garlic (1 per bowl), if using. If you're not a fan of garlic, feel free to leave it out. I love garlic so I added it but it's not required. Place a pinch or 2 of the herbs of your choice and even a little pinch of chili flakes (if you like a little spicy kick but this is totally optional and ok to leave out). For extra flavor, use freshly chopped herbs. Stir. Generously sprinkle with grated or shredded parmesan cheese on top. Italian Roasted Potatoes   Serve 3 | Prep Time: 5 Minutes | Cook Time: 15 Minutes Ingredients: 1 lb baby potatoes 1 tablespoon olive oil 2 cloves garlic, minced 1 teaspoon bottled Italian seasoning 1/4 teaspoon salt or to taste 2 dashes paprika 1/3 cup shredded Parmesan cheese 1 teaspoon chopped parsley leaves 2 tablespoons unsalted butter, cut into small cubes Method: Preheat the oven to 400F. Clean and rinse the baby potatoes, drain and cut into halves. Heat up an oven-safe skillet (cast-iron preferred) and add the olive oil. Add the potatoes and cook until the surface turns crispy. Turn over the cook the skin side until nicely browned. Push the potatoes to one side and saute the garlic, follow by the Italian seasoning, salt and paprika, stir to combine well. Turn off the heat and sprinkle the cheese and parsley on top of the potatoes. Transfer the skillet into the oven, roast for 15 minutes. Add the butter cubes on top of the potatoes, serve immediately.     ITALIAN MEATLOAF Ingredients 1 yellow onion, diced 1 fire roasted red pepper, diced olive oil, for sauteing 5 cloves garlic 1 vine-ripened tomato, diced 1 tablespoon dried Italian seasoning 1 egg ¾ cup tomato sauce 1 teaspoon Worcestershire sauce 1 + ¼ pounds ground beef or turkey ½ cup Italian seasoned bread crumbs ¼ teaspoon black pepper 2 tablespoons Parmesan cheese, grated 1 + ½ cups mozzarella cheese, shredded Instructions Heat a skillet with enough oil to cover bottom of pan over medium-low heat, add onion and pepper, saute until tender. Add garlic, saute until fragrant; add tomato and Italian seasoning, saute 3-4 minutes. Set aside to cool. Preheat oven to 400 degrees F. In a large bowl whisk together egg, ⅓ cup tomato sauce and Worcestershire. Add ground meat, bread crumbs, black pepper, Parmesan and sautéed veggies. Combine with a fork; mix in 1 cup of mozzarella. In a large, greased roasting pan form the meat into a loaf. Spread the remaining ½ cup sauce over top and sprinkle with remaining ½ cup mozzarella. Do not soften in microwave 4 large eggs 3/4 cup (190g) frozen orange juice concentrate, thawed 1/2 cup (121g) milk 1 Tablespoon (10g) orange extract zest of 1 orange Orange Coloring Gel (optional) We used a small amount. DIRECTIONS Preheat the oven to 350 degrees (This Recipe uses the Reverse Creaming Method of Mixing.) Grease and flour two 8 x 2 inch round pans. Works well for cupcakes.

Preheat the oven to 350°F (176°C). Line the bottom of three 8-inch (20cm) cake pans with parchment paper and grease the sides. 2. Beat butter and sugar until light in color and fluffy, about 3-4 minutes. 3. Add eggs one at a time, beating just until blended. 4.   Candy Corn Cupcakes   Ingredients 1 white cake mix 2 eggs 1 cup sour cream 1/2 cup milk 1/3 cup vegetable oil Garnish: candy corns and orange sprinkles Buttercream Frosting: 1 cup butter 4 cups powdered sugar 1/4 teaspoon salt 1 teaspoon vanilla extract 1/3 cup heavy whipping cream Instructions Preheat oven to 350 degrees and line cupcake pan with paper liners. Combine all ingredients in a large bowl until incorporated. Scrape sides of bowl and then beat on medium-high speed for 3 minutes. Divide batter in half and color one half orange and the other half yellow. Wilton has color gels that are really vivid. You can find them at craft stores. Fill paper liners with about 1-2 Tablespoons of yellow batter. Then top with 1-2 Tablespoons of orange batter. Bake according to cake mix package directions - about 15-18 minutes. Cool cupcakes and frost with your favorite frosting and garnish with a candy corn and sprinkles. Makes 18 cupcakes. For the Buttercream frosting: In a mixing bowl, cream butter until fluffy. Add sugar and continue creaming until well blended. Add salt, vanilla, and whipping cream. Blend on low speed until moistened. Beat at high speed until frosting is fluffy.
